Have you tried making moi moi with lentils?

I can tell you that the taste is very similar to beans. The texture is a little different though.

Here is what you you need to make your Moi Moi with Lentil.

Ingredients for our favorite Lentil Moi Moi Recipe:

  • 1.5 Cup Red Lentils
  • 3 Bell Peppers
  • 1-2 Hot Peppers
  • 2 tablespoons palm oil
  • 1 Onion
  • 2 – 4 Eggs (1 for batter, others for garnish)
  • Smoked fish (Moi moi garnish 😁)
  • salt to taste
  • Stock Cubes to taste

Lentil Moi Moi Directions:

The process is very similar to regular moi moi with the only difference being the amount of water added while blending. Watch the video below to get a better idea.

 

 

  1. Soak lentils for about 10 minutes

2. Chop peppers, onion and hot peppers

3. Combine lentil, peppers and onions in blender with little water and blend.

4. Add egg into blended batter

5. Add palm oil and seasoning into batter. Mix all ingredients in with a hand whisk or mixer.

6. Portion out moi moi with your prefered garnish.

7. Steam moi moi for 45 minutes or until its set.

That is it. No additional wahala required.
